Australian cuisine is little known in Europe. Too bad. Justin Jennings thought so too, who ended up in Lisbon. Jennings was once Young Chef of the Year and won a cooking show on Amazon — not the worst credentials for his own restaurant. Modern dishes are served with the multiethnic origins that define Australia. Of course, there’s kangaroo and crocodile, but what’s exciting is the fusion with Asian flavors and the occasional Italian influence. Recommended by Michelin, so all things considered, it’s still somewhat within an acceptable price range. A place where you follow the recommendation and order the tasting menu, preferably with wine pairing. Or a liter of Sangria. Jennings is also available for private bookings.
